Grab and Go Freezer Lunch - Homemade Hot Pockets

This week I decided to try something a little different. In the past, I have made freezer burritos for coach to take to work with him. He’s in a fantastic part of town with many great lunch choices.... so to keep the budge intact and the eating out to a minimum, last year I started making ready-to-go freezer lunches. I tired out of the burritos after a bit, so I wanted to find something else we could do that is versatile, delicious and, of course, EASY. And this nails it on the head!  The crust is the same recipe as...

Feeding the Masses: My Go to Dinner

Fellow coaches wives I know you’ve been there before... It’s Wednesday and coach says “hey hun, could we have the players over for dinner?” You say “Sure, when were you thinking?” To which he answers, “Thursday?” As in tomorrow Thursday???? Good thing I usually have something in our freezer to make this happen... this is one of the absolute easiest meals to put together last minute, plus it’s always a crowd pleaser at our house. Then you look up and it’s dinner-time. How on earth did that sneak up on you? And, if you’re honest, you don’t even have the mental capacity to try and think about what you could throw together quickly to feed the kids, who seem to be turning rabid by the minute. This is my go-to. It’s super easy and Poynter kid-approved (which if you know my 4...

Where You Go, I Will Go

Where You Go, I Will Go

I was brainstorming new ideas for shirts and products for the website, and I thought of a sign/picture holder that says “Where you go, I will go”. I thought this was fitting for our life as a coaching family, seeing as we have been to many schools throughout our dating, engagement, and marriage. Some moves were by choice, while others were due to a new head coach coming in and bringing new staff. I thought it would be fun to have somewhere to hang our staff pictures and pictures of our kids as they grow up on the football field....
